roulette stats reset?

Noticed some folks at my local spot were tracking red/black and odd/even to look for "streaks," but the pit boss said stats pretty much reset every spin. I get that roulette's technically random, but I'm curious if there’s any strategy that actually makes use of past spin stats at all, or if it’s just giving yourself something to do. Personally, I just set my wager and wait, but a few swear by their notepads and number clusters. Wondering if anyone’s actually seen a pattern pay off.
