Online casino server stability: why do some crash during peak times

Been noticing lately that some casino servers just can't handle traffic when things get busy, especially on big tournament nights or when new slots go live. Had a blackjack hand freeze right before the dealer flipped the last card the other day, and that definitely killed the vibe. It always makes me wonder what makes one site more stable than another when they're supposed to be running similar games and tech on the back end.
