best poker if you want consistent win rate not variance

Been grinding roulette and slots mostly, but lately I’m thinking about switching it up with some poker just for a better shot at steady returns. My whole thing is I get frustrated with wild swings. I know all gambling has some variance, but I’m wondering which poker format actually gives you the most consistent win rate long-term. I don’t mind smaller wins if it means less crazy up and down.

Are tournaments just a big gamble or is there a way to play cash games that lets you grind out steady results without the bankroll dropping off a cliff?
